The cryogenic hardening with liquid nitrogen adds to the strength, hardness, and flexibility of the steel by increasing the steel’s crystalline structure. Moreover, the rust and corrosion-resistant cladding give the knife a clean finish.

We also can’t forget that the broader blade provides a better grip for improved knuckle clearance.

Blade Structure

The DALSTRONG Chef’s Knife-Shogun Series X Gyuto has a 55mm wide blade, precision forged from 66 layers of premium high-carbon stainless steel layers for ultimate strength and durability.

The scalpel-like edge of the blade is hand-polished to a mirror finish using the 3-step Honbazuke method. The nitrogen cooling at the end further improves the resilience and strength of the blade.

A stunning hammered tsuchime finish exhibits beautiful artistry while reducing drag and minimizing food sticking.

That won’t be the case with this one, however. The edge of the DALSTRONG Shogun Series X 8″ knife blade is hand-polished at an 8-12 degree angle on each side using the Honbazuke method.

The Super Steel cutting core with a 62+ Rockwell hardness will give exceptional edge retention. The hard material will hold its edge for longer, so it stays mighty sharp, no matter how frequently you use it.
