I chose the Chef’s Choice 110 mainly on the recommendation of Cook’s Illustrated magazine, which rated it highly in one of its bi-monthly issues. At around $80, it was pretty expensive back in the 1990s, but somehow I figured it would be worth the price. Why not a sharpening steel? Well, let’s just say they don’t look easy to operate and there’s no way to tell if you’re using them correctly unless you’ve been trained.
Sharpening Knives: As easy as 1, 2, 3
Chef s Choice 110 has three slots, although at first glance you only see two of them. That’s because the stage 1 slot is for true sharpening, and it’s hidden by a little removable cover. True sharpening creates a totally new edge on your knife blade, and removes some of the blade’s metal in the process. That’s why the company recommends that you only use the sharpening slot approximately once per year.
The other two slots on the Chefs Choice 110 are for slight sharpening and final honing of the knife’s blade. The middle slot, stage 2, requires several slow passes and the right slot, stage 3, is for quick honing of the blade. Stage 3 honing doesn’t actually remove metal from the blade, it only re-orients the blade so that it’s smooth and, well, honed.

The Chef’s Choice 110 is electric knife sharpener, so after plugging it in you’ll hear a constant whirring noise to let you know it’s ready to sharpen. As you pull knives through the slots, you’ll definitely hear grinding noises during the process, so it’s not a good activity at night or during another housemate’s nap-time. Like any tool, proper operation is important. Took a few tries to learn how to handle it properly, but then it is fantastic. Sharpened a lot of Chicago Cutlery knives we had that were totally dull. Tried sharpening them with the sharpening iron and with a ceramic sharpener to no avail. After sharpening with the Chef’sChoice Diamond Hone 3-stage Electric Knife Sharpener, they worked perfectly cutting thin tomato slices without spilling the seeds or crushing the slices. This paid for itself the first time I used it! I highly recommend it.

I bought this sharpener because I got tired of getting out the whetsotne to sharpen my kitchen knives. I love knives, swords, and other sharp objects and I’m constantly finding new uses for them in normal life. I have been so impressed with the performance of this sharpener on my kitchen knivs that I’ve actually ditched my whetstone and I’m sharpening my machetes on it now too.

I did lots of research to find the best knife sharpener for my needs and was pointed to this particular model (I think the reveiw that sold me was from Cook’s Illustrated). I did not need a scissor sharpener and I did not have Japenese style knives so this model was perfect for my high quality German knives. I most recently bought this for my sister-in-law since I’ve used this in my kitchen for years now. If you have good knives, or even cheaper ones, this is a must to keep the edges sharp and soft tomatos from becoming a challenge.
